Why Are Store-Bought Yogurts Useless?

If you, dear student of the Mahapurna school, have reflected on the content of the latest Lessons and started doing what they describe, you may have noticed that these yogurts are quite sour.

And that is after only 12 hours. The longer it sits, the sourer the product becomes.

Store-bought yogurts, however, can sit on shelves for weeks.



Most store-bought yogurts are indeed almost useless as a source of probiotics:


1. Problem: pasteurization after fermentation

  • Many industrial yogurts are pasteurized after fermentation to extend their shelf life.
  • Pasteurization (heating to 80–90°C) kills almost all living bacteria, including beneficial Lactobacillus and Bifidobacterium.
  • As a result, you eat yogurt with dead bacteria—it may taste good, but it does not restore the microflora.

2. Problem: preservatives and stabilizers

  • Yogurts often contain:
    • Preservatives (such as potassium sorbate and sodium benzoate) to extend shelf life.
    • Stabilizers (gums and starches) for the “right” texture.
  • These additives inhibit the growth of any living bacteria, even if they were originally present.

3. Problem: long shelf life

  • Natural live yogurt spoils within 5–7 days.
  • If a store-bought yogurt has a shelf life of 2–3 months, this almost certainly means:
    • It was pasteurized after fermentation.
    • Or it contains so few live cultures that they cannot “spoil” the product.

4. Problem: added sugar

  • Many store-bought yogurts contain a lot of sugar.
  • Large amounts of sugar suppress the activity of probiotics and promote the growth of harmful microflora.

Are genetically modified bacteria used in store-bought yogurts?

  • On an industrial scale, yogurt production often uses genetically modified or specially selected bacterial strains.
  • These bacteria are genetically adapted to:
    • Ferment milk quickly.
    • Provide the desired thickness, taste, and texture.
    • Better withstand pasteurization or freezing.
    • Remain viable longer during storage.

Such bacteria may be:


  • Modified using traditional genetic engineering methods (for example, CRISPR).
  • Or developed through special selection via mutagenesis (inducing random mutations to obtain desired properties).

Why manufacturers do this:

  • Natural (wild) strains act slowly, inconsistently, and often produce unpredictable results.
  • Genetically modified strains make it possible to produce a uniform product on a mass scale, meeting industrial requirements:
    • Uniform texture.
    • Stability during storage.
    • Minimal risk of ruining a batch of yogurt.

What is the problem:

  • These “improved” bacteria do not always behave like natural ones.
  • Their ability to genuinely restore the intestinal microflora is questionable:
    • They often simply fail to colonize the human intestine.
    • Their action is limited to the milk fermentation process and does not provide health benefits.
  • In addition, the effects of long-term consumption of such GMO bacteria on the human body have not been fully studied.

Remove the stems, root ends, and any defects from the vegetables. Do not peel them. Wash thoroughly. It is convenient to do this in the kitchen sink. Put the vegetables in the sink, cover them with room-temperature water, agitate them thoroughly with your hands, and drain the water. Do this three times. On the third time, remove the vegetables from the water and place them in a basin.
Cut them into small, but not tiny, slices. Load the blender to 5–7 cm below the maximum level. Fill with water to the maximum. Blend at low speed for 15 seconds. Pour into the tank.

Fill the entire tank this way, but not right to the top—leave 4–5 cm. The result will be a thick mixture in which a spoon can stand. After an hour, add the dill seeds and rye starter. It is best to use fresh starter, when you are baking bread. However, you can also use it straight from the refrigerator while dormant; it will awaken on its own. The starter is added after an hour rather than immediately because the radish is very intense at first and needs some time to settle.
Mix everything thoroughly with a wooden spatula, cover with the lid, and leave to ferment for TWO FULL DAYS. After half a day, the mixture will begin to ferment. Stir it occasionally with the spatula. The optimum temperature for fermentation is 24–25°C. However, 20°C is also possible; it will simply take a little longer, for example, TWO AND A HALF DAYS.
In fact, the vegetables can ferment on their own, without starter, like cabbage. However, RYE STARTER GIVES THE SHCHI STRENGTH AND CREATES PRECISELY THE KIND OF ACIDIC ENVIRONMENT WITH MICROORGANISMS THAT IS MOST BENEFICIAL FOR OUR DIGESTIVE TRACT AND MOST HARMFUL TO PARASITES AND PATHOGENIC FLORA.

The starter is prepared once and subsequently used and replenished. It is a living dough that can lie dormant in the refrigerator or rise actively when fed. The starter biomass consists of natural microorganisms (fungi, bacteria, and others) that live on rye grains.
The idea is to revive, multiply, and grow these microorganisms so that they self-organize into a stable symbiotic colony. Life in nature itself is built on the principle of symbiotic colonies of microorganisms or macroorganisms (for example, soil, the ocean, and intestinal microflora). Organisms in symbiosis support and complement one another.
The starter is easy to prepare, from flour and water. Ratio: 2 PARTS FLOUR TO 3 PARTS WATER (there is exactly one and a half times as much water). You will need a room thermometer, digital kitchen scales, a GLASS pot or a 1.5-liter bucket made of non-reactive plastic, and a wooden spatula. It will take four days; on the fifth day, you can already bake bread.
The starter should be prepared EXCLUSIVELY AND ONLY FROM RYE FLOUR, because compared with wheat and other flours, rye starter is the most stable, healthy, and strong. The microorganisms living on rye grains are quite sufficient to establish a well-coordinated symbiotic colony.
Washing the grain has no significant effect on the microorganisms, so there is no need to worry about it. However, high-temperature drying kills most of the necessary microorganisms, so sprouted grain intended for starter should be dried at a temperature no higher than 41°C. Clearly, industrially produced flour is unsuitable for creating a high-quality starter.
As already mentioned, THE STARTER IS PREPARED ONCE, after which it can be used continuously by setting aside part of each mixture for the next batch of baking.
Preparation method:
1. Using scales and a glass, measure the required amount of warm water at a temperature no higher than 36–37°C. The water should be clean, filtered, and non-chlorinated. You may use spring water, boiled water, or distilled water infused with shungite and flint. Pour the water into the container.

2. Load the measured weight of grain into the mill and grind the flour directly into the container of water. Set the grinding level to the finest setting.
3. Stir with a wooden spatula so that the flour combines evenly with the water. The result should be a thick-sour-cream consistency.
4. Cover the container with a lid, but not airtight; protect it from light with a cotton towel and place it in a secluded spot away from drafts and electrical appliances. The optimum temperature for feeding the starter is about 24–26°C, no higher. Use a thermometer to find such a place in the kitchen. It is warmer closer to the ceiling.

This procedure must be repeated for four days, morning and evening, adding new portions of flour and water to the container.
DAY 1. Morning: 40 g flour, 60 g water. Evening: 40 g flour, 60 g water.
DAY 2. Morning: 40 g flour, 60 g water. Evening: 40 g flour, 60 g water.
DAY 3. Morning: 40 g flour, 60 g water. Evening: 40 g flour, 60 g water.

DAY 5. In the morning, we will have 800 g of starter. 500 g will be used for the first loaf.
Put the remaining portion in the refrigerator until the next bake.
The starter should have a pleasant natural-kvass smell. If it smells bad, you have either violated the procedure in some way or used dirty utensils. If everything was done correctly but the smell is still nauseating or chemical, then the raw material—the grain—was of poor quality or contained foreign impurities. In that case, find grain from another producer and seller.
Some recipe authors write that a smell of belching or something similar is “normal” for starter. But it is not normal. Starter should not have any “disgusting smell.” If on the fifth day the starter smells of alcohol, acetone, vinegar, or mold, throw it away and start again. Try not to deviate from the procedure, and you will succeed.
The only exception is if the starter, at the specified proportions, turns out not thick and fluffy but rather runny; this means it is unhealthy. It means the grain you bought was grown using chemicals. Look for other sellers/suppliers. I repeat: rye grain should NOT BE LARGE, UNIFORM, AND ATTRACTIVE, BUT RATHER SMALL AND UNPREPOSSESSING.
Now a few practical tips.
• It is best to choose electronic scales with a tare function. The principle is as follows: place the container on the scales, press the button to reset the reading to zero, then add the product to the container; the display will show the net weight. This is convenient.
• For storing the portion of starter intended for the next bake, choose a container made of glass, ceramic, or food-grade plastic, not metal. The lid should not be airtight, but it should not be wide open either, so that the starter does not absorb odors from the refrigerator. If the plastic lid closes tightly, you can make several small holes in it with a needle. Do not wash starter utensils with household chemicals. Everything rinses off easily with warm water.

• The starter can be stored in the refrigerator on the top shelf, where the temperature is not at its lowest. Long breaks between bread baking are undesirable. The starter should be refreshed regularly. I personally tried leaving it for two weeks, and it revived successfully. It may be able to survive for three weeks, but it is better not to leave it longer than that; otherwise, you will have to start it from scratch. After all, starter is a living colony of microorganisms, and it should be treated as a living entity. If you are leaving for a long time, ask someone to look after it and feed it at least once a week.
• Flour should always be ground immediately before use. Do not store it—it is perishable. Vitamins and nutrients oxidize quickly in air. That is precisely why industrially produced flour cannot be considered a natural product: manufacturers will resort to any trick to extend its shelf life.
• Set the grinding level to the finest fraction. This is because it is impossible to achieve at home with an electric mill the same degree of fineness obtained industrially. But that is not necessary. The quality of bread—the kind of bread that should be REAL bread—is determined by entirely different parameters:
1. Sprouted grain.
2. Freshly ground flour.
3. Natural, wild starter.
4. The presence of bran and germ in the flour.
5. The absence of chemical and synthetic additives.
Flour should not be white like starch, even if it is wheat flour. It is impossible to describe exactly what it should be like. When you make your own flour for the first time, smell it, taste it, and feel it, you will understand what REAL flour should be like.
Bread should not be white and fluffy either. It should be REAL, not synthetic. Real bread is likewise impossible to describe in words. When you taste it, everything will become clear. Its taste and aroma are distinctive and NOBLE.
One question remains open: if you do not yet have a mill or dehydrator but want to bake your own bread right now, what should you do? You can try your luck by looking in local stores or on the Internet for WHOLEGRAIN rye flour, or at least first-grade flour. If you are lucky enough to find a product from a conscientious, honest, and, importantly, reasonable producer, you may be able to make real (or almost real) starter and bread.

In any case, it is better to acquire everything necessary so you can break free from industrial producers and sellers, who care exclusively about profit and not about your health, as well as from a system that is directly interested in your ILL HEALTH.

In terms of nutritional value and health benefits, sauerkraut is comparable to sour shchi. Despite its simplicity and familiarity, this product can confidently be classified as a superfood. The main virtue of sauerkraut is that IT CLEANS THE INTESTINES, SUPPRESSES PATHOGENIC MICROFLORA, AND CULTIVATES SYMBIOTIC MICROFLORA. Cleansing comes first; nutrition comes second. In a clean organism, the efficiency of digestion is much higher.
Sauerkraut is rich in vitamin C, which the body always needs, especially in winter and early spring. Any nitrates present in the cabbage are neutralized during fermentation.
For fermentation, do not use green, fibrous, tough cabbage; use white, juicy, crisp cabbage that crumbles easily. The Slava variety works well when fully ripened. Choose medium-sized carrots, not huge ones. It is better to buy both from a market, private growers, or small farmers rather than a supermarket. Large producers generally do not care about the ecological quality of their products.
Cabbage can be fermented without salt, but this is quite difficult—it behaves unpredictably. It may become too sour and soft. Therefore, this recipe gives the optimal amount of salt for a classic result. It is best to always use HIMALAYAN SALT; IT PLACES LESS STRAIN ON THE KIDNEYS.

SAUERKRAUT IS COMPARABLE TO SOUR SHCHI IN TERMS OF NUTRITIONAL VALUE AND HEALTH BENEFITS. DESPITE ITS SIMPLICITY AND FAMILIARITY, THIS PRODUCT CAN CONFIDENTLY BE CLASSIFIED AS A SUPERFOOD. The cabbage-to-carrot ratio should be 12:1. This ratio is very important. If you exceed the amount of carrots, the cabbage will turn out excessively sour. Use salt at 1.5% of the total weight. Multiply the combined weight of the cabbage and carrots by 0.015. If you use less salt, the cabbage may also become too sour. But you can try 1% as well.
Remove the six top cabbage leaves intact; they will be used on the bottom and on top. Finely shred the cabbage. Discard the thick, coarse leaves near the core, and chop the cleaned core. Grate the carrots. Put everything into a 25-liter enamelled tank so it is easy to mix. Sprinkle with salt, mix thoroughly, and massage it (but not too vigorously—moderately).
Take a 12-liter enamelled tank or bucket, cover the bottom with cabbage leaves, add all the mixture, and press it down firmly with your fists. Cover the top with leaves and a flat plate, preferably glass. Place another plate with a 0.5–0.7 kg weight (stones) on the plate. Cover with a lid or cotton/linen cloth.

Cabbage ferments best during a waxing moon. After 8 hours, if no juice has appeared on top, dissolve 6 g of salt in 400 g of water and pour it into the tank. This is done so that the cabbage remains submerged in brine. It will not ferment in contact with air; it will spoil instead.
After 12 hours, remove the plates and pierce the cabbage leaves down to the bottom with a wooden stick in several places. Return the plates. Repeat this procedure several times a day. The cabbage ferments for three days at 20–25°C.

After three days, transfer the cabbage to three-liter wide-mouth jars, with cabbage leaves on the bottom and top in the same way. Place several more stones on top, preferably shungite, so that the brine completely covers the cabbage. Close the jars with lids and put them in the refrigerator. After another three days or so, the cabbage is ready.
If you followed the procedure, you will see that you prepared the sauerkraut correctly, with an impeccable classic taste. You will not find sauerkraut like this at a market or in a store—there is always something wrong with it.
Eat the cabbage separately from other dishes, at least half an hour before the main meal, so that in the body it performs cleansing rather than fermentation. It can be eaten plain or as a salad with oil, onion, and other vegetables. It also works very well in borscht, half-and-half with fresh cabbage.

Sauerkraut
Ingredients: 2.5 kg white cabbage, 2 carrots.
Shred the cabbage and carrots in a large bowl. Massage the vegetables with your hands. Sterilize the jar (you can at least heat it in the oven).
Transfer the vegetable mixture to the jar, pressing it down layer by layer. Leave 10 cm free at the top. Add a glass of starter containing lactic acid bacteria (Vegaferm) and 1 tsp honey. The fermentation temperature is 18°C. If using starter, you do not need to worry about the temperature. You can place a cabbage leaf on top. Fill the jar to the top with clean water. Place the jar in a deep dish. Leave for 3–5 days, making sure that the top layer of cabbage does not remain above the brine. From the second day, pierce the cabbage in the jar with a wooden stick all the way to the bottom; this releases accumulated gas. Store the finished cabbage in the refrigerator.
Fermented oats
Water and oats, 1:1. Rinse and blend; for 1 liter of mixture, add 1 ml of enzyme, for example, amylase 5T, and blend at low speed. Then ferment over low heat for 2–3 hours. Temperature: 60 to 95°C (for example, in a slow cooker). During the process, the starch begins to break down and the oats acquire a caramel flavor. After fermentation, the oats are sweet.
Milk: dilute the fermented oats with water and strain.
Kefir: dilute the oats with water and add the “Vegaferm” probiotic. Mix at low speed and leave in 1-, 2-, or 3-liter jars for 3 days at room temperature. The result is a slightly sweet kefir; in summer, for example, you can make okroshka with this kefir.
Yogurt: without diluting the fermented oats with water, add probiotics, mix, and place in a yogurt maker for 12–15 hours. Before fermentation, you can add berries, dates, bananas, for example. (The temperature in the yogurt maker should not exceed 42 degrees.) Then put it in the refrigerator.

Thank you! I hadn’t even thought about the temperature. :( I measured it, and it turns out that in the yogurt mode of my multicooker, t = 39° and it can’t be changed. I can try turning it off when the required temperature is reached and leaving it, then turning it back on if necessary after measuring. I’ll experiment.

The reuteri starter arrived. After 12 hours at +41, it produced a tasty product, somewhat like a runny yogurt, with a flavor reminiscent of the homemade "sour milk" from my childhood (when milk was fermented to make cottage cheese in the oven). It went down well on an empty stomach :) And for some reason, it tastes better than what I made with store-bought yogurt starters :giggle: Thank you to our Teacher for this invaluable knowledge! 🙏 🌹

By the way, you can ferment more than just cow's milk.

You can also use various nut milks.

You can even ferment porridge.

Рецепт канджи

Ингредиенты:

  • Свёкла — 2–3 шт. (нарезанная мелкими палочками)
  • Морковь — 1–2 шт. (нарезанная мелкими палочками)
  • Горчичные семена (порошок) — 2–3 ч.л.
  • Растительное масло — 1–2 ст. л.
  • Вода — 2 литра
  • Соль — по вкусу, но должно быть достаточно соленым, чтобы сдерживать рост ненужной микрофлоры
Приготовление:
  • Смешайте свёклу, морковь, горчичный порошок и соль в большом чистом стеклянном или керамическом сосуде.
  • Залейте водой, оставляя немного пространства для воздуха.
  • Добавьте масло, чтобы оно покрыло поверхность жидкости. Оно придает напитку насыщенный вкус и поддерживает процесс ферментации.
  • Накройте тканью или крышкой, которая пропускает воздух.
  • Оставьте в теплом месте на 3–5 дней, ежедневно перемешивая.
  • Когда напиток станет кислым и ароматным, он готов. Перед употреблением процедите.
Принимайте канджи перед едой или вместе с пищей.

Оставшуюся квашеную свёклу и морковь можно добавлять в салаты или использовать в других блюдах.

Дополнительные замечания:
  • Можно не чистить свёклу и морковь, а только тщательно отмыть. На поверхности корнеплодов присутствует полезная естественная эпифитная микрофлора, обогащающая конечный продукт в процессе ферментации. Она же присутствует и на семенах горчицы.
  • Можно натереть свёклу и морковь на крупной терке.
  • Для ускорения процесса ферментации можно подлить немного рассола из квашеной капусты или добавить стартовую культуру.
  • Срок окончательной ферментации зависит от температуры. Если прохладно – может затянуться до 7 дней.
  • Может окрашивать мочу в веселый пурпурный цвет, не пугайтесь, это нормально.
  • Продукт долго хранится, как и любые квашения.
