Poland and Lithuania were initially separate states and independently expanded into the lands of former Rus'.

No, the image of a knight on the coat of arms of a Polish town does not in itself signify loyalty to the Lithuanian king or the Catholic Church.
Poland had its own knightly estate, from which the szlachta later developed, and knightly symbolism was a common part of Polish heraldry even independently of Lithuania.
But there is one important exception: the mounted warrior with a raised sword, known as the “Pahonia,” was the coat of arms of the Grand Duchy of Lithuania. After Poland and Lithuania united, it entered the common coat of arms of the Polish–Lithuanian Commonwealth together with the Polish White Eagle.
And the fact that Poles are Slavs creates no contradiction here. Knighthood was not exclusive to Germanic peoples: Poland also had its own knightly estate.
