During the soaking and germination of grain, active processes of proteolysis of gluten and other difficult-to-digest proteins take place, breaking them down into small peptides and free amino acids. Thanks to the presence of active proteolytic enzymes, protein digestibility improves. The toxicity of these proteins is significantly reduced compared with the proteins in whole dry grain and flour. In addition to storage proteins, sprouted grains also undergo the degradation and reduced activity of lectins—proteins that can provoke intolerance reactions or allergies in sensitive individuals.

Sprouted grains have been found to have a lower glycemic index (GI = 40–45) compared with traditional white bread (GI = 90), as well as a reduced content of saturated fatty acids. A low glycemic index is a very important characteristic of a carbohydrate product in the diet of people with diabetes. The higher the index, the more actively the starch in the food is broken down into glucose, and the more quickly a high blood glucose peak develops in a person with diabetes after eating. Conversely, the lower the glycemic index of a product, the lower the blood glucose concentration after eating and the more gradually it rises over time, creating more comfortable conditions for the patient after a meal.

Thus, products made from sprouted grain are characterized by a minimal content of undesirable substances (phytic acid, gluten, lectins) and a high content of certain vitamins and minerals, which indicates the quality of the original product.

The other day I came across an article about breast milk, and it turned out that, apart from being 87% water, it contains more carbohydrates than fats and proteins, in an approximate ratio of 7:4:1.
This information left me somewhat puzzled.
After all, nature has designed everything perfectly, and if this were harmful, its composition would be different.
Maybe we are simply eating the wrong kinds of carbohydrates?
And perhaps, indeed, the simpler and more natural the food, the more beneficial it is?

Maybe we are simply eating the wrong carbohydrates?
And perhaps it really is true that the simpler and more natural the food, the healthier it is?
Yes, that really is a very good question.
And it is indeed very useful to find out what a child is fed, because it is very close to what is natural rather than invented.

There is, however, one nuance: when we look at scientific data such as this:

Carbohydrates in breast milk are represented by lactose, accounting for 7%. Proteins account for 1%, and fats for 4%.
This refers to mothers who already eat carbohydrates, such as sugar in its pure form, starches, and so on.
And as the doctors themselves say, humanity currently consumes many times more carbohydrates than it should.

In other words, these are not the figures for a mother who follows a keto diet.

There is further scientific information. It says that the milk has this composition only at first. As the child grows, the milk changes, becoming increasingly fatty.

In fact, this is a very complicated subject.

A nursing woman in Africa, for example, living in almost wild conditions, is not the same as a woman giving birth in the ideal, controlled conditions of a German hospital...

Giving birth in winter, giving birth in summer, giving birth underwater, giving birth in different positions, the mother's emotional state during pregnancy....

A huge number of factors.

This is a vast field, and all of it affects the composition of milk.

Below is research by scientists who, “for some reason,” focused specifically on the fats in breast milk:

Researchers from the Skolkovo Institute of Science and Technology analyzed the lipid composition of human milk and that of six other mammalian species. They found that human milk differs from the milk of other primates more than expected, which may indicate that it has adapted to support a more complexly structured brain. The scientists' work was published in the journal BMC Evolutionary Biology.

Milk enables mammals to obtain the nutrients needed for the growth and development of their bodies. Milk composition differs among animals depending on their habitat and physiological needs. It can also change as the offspring mature. Milk fats are mainly represented by fatty-acid triglycerides, whose amounts and types depend on the species, stage of lactation, season, and mother's diet. Fatty acids in the offspring's body serve not only as a source of energy but also as components of cell membranes. This function of fats is important for brain development. Therefore, the evolution of milk composition may proceed in parallel with the evolution of the brain.

Researchers from Skoltech analyzed fats in different milk samples using mass spectrometry. The authors analyzed milk from humans, two species of macaques, cows, pigs, goats, and yaks, and compared its composition across 472 individual components. The researchers compared differences in milk-fat composition with the evolutionary distances between the species already known. For the most part, these distances were confirmed for all species except pigs. Analysis of triglyceride composition showed that the milk of even-toed ungulates is dominated by saturated and monounsaturated fatty acids, whereas primate milk is rich in unsaturated fatty acids.

Two days after Om Shanti opened this topic, I somehow easily switched to this type of diet! No flour-based foods, sweets, grains, etc. Month one is over—and everything is going well! No cravings, withdrawal symptoms, or anything like that. The only thing is that, because of my work schedule, I sometimes have dinner quite late. I either don’t have breakfast at all or have a very light one. My body feels light, I have enough energy for everything, and the feeling of heaviness and drowsiness after eating has completely disappeared. What do I eat? Beans, buckwheat from time to time, chickpeas, quinoa with various additions, and of course all kinds of fruit and lots of vegetables! The hit has been a smoothie with banana and homemade milk. Nuts. Unsweetened tea with a currant leaf and honey—delicious! Coffee occasionally; coffee tastes completely different without sugar, and I don’t particularly crave it :) I tried brewing stevia—it didn’t work for me)))) Maybe I just haven’t appreciated it yet. Additional supplements: wheatgrass and spirulina.

I eat about half as much. Food simply doesn’t go down. And my weight is still normal. If everything is energy, then apparently, over time, less and less dense food is needed. Thank you :)

I tried the keto diet four years ago. The recommendations said that it was better not to drink alcohol, otherwise ketones would not be produced. Once I started following it, I realized: why did I even need to drink? I haven’t had alcoholic drinks for four years since then. Before the keto diet, I had a strong craving for alcohol and enjoyed drinking. Later, I added more carbohydrates—I eat porridge and homemade healthy baked goods made with a sugar substitute. I like it when there are a few more carbohydrates. Intermittent fasting doesn’t suit me. My kidneys start aching if I eat twice a day. I need to allow myself at least a small third meal.

Start with a small amount of oil.

But definitely give up sugars, both simple and complex.

However, in my version, as you saw, there are sugars in the morning in the form of fruit. When it’s ONLY FRUIT, and nothing else.

I’ve been following a similar diet for more than a month now. I’ve eliminated all types of sugar from my diet (except for a little honey occasionally), as well as all grains and potatoes. I seem to have more energy, and it’s become easier to wake up in the mornings.
I discovered avocados—they’re very tasty! I also tried quinoa and liked it. It can be eaten occasionally for variety as well. In general, for some reason, at first I wanted to cook corn porridge, but somehow that passed on its own. And of course I wanted some kind of baked goods and sweets, but that desire quickly disappeared on its own.
The other day I opened the refrigerator and decided to check what was in the small frying pan. It turned out there were boiled potatoes in it, and I hadn’t known that. I opened it, smelled them, and the smell was disgusting! My body is telling me that I’m on the right path))

It’s not clear how this could possibly be harmful.
To be honest, anything can be harmful if a person is ill. There are illnesses in which certain foods are prohibited.
And people don’t switch to keto immediately, because one person may have one problem and another person may have a different one. It needs to be done gradually.

A very interesting video by a practicing doctor on the subject. In general, people eat more than they expend in energy.
When I was a child and a teenager, carbohydrate consumption wasn’t this high. Sweets and cookies were eaten in small amounts and not often, while cakes were only for holidays and just a little—and people were healthier and slimmer. I understand for myself that limiting sweets and baked goods is definitely necessary.

I started skipping breakfast sometime around 1995, when Malakhov's book "Cleansing the Body" appeared for sale.
The whole country was cleansing itself :)

Why did I start doing this as early as 1995?

At the very beginning of this book, there was a passage about a saint in Europe whom Yogananda had discovered. She ate nothing. In other words, it was an excerpt from Yogananda's book about how people can live without eating anything. Such cases do exist on Earth—and they have even been confirmed by doctors.

And I thought, okay, I can't do that yet, but I can give up breakfast and gradually push my first meal later.

At first, I postponed breakfast until 11, and then eventually until lunchtime, around 1–2 p.m.

In the morning, I drank tea plain or coffee. I might also drink some water. And I didn't eat until lunch. You can calculate how many years that is :)

As someone with such extensive experience of intermittent fasting, I can say with certainty that it is beneficial.

Yes, I didn't always do it this way; there were days when I had breakfast. But for the most part, my life has been without breakfast.

Those who have been practicing BOE-do on my website for a long time know that at first this was the primary condition of BOE-do. But later I removed it from the mandatory requirements because I wanted it to be accessible to everyone.

So everything I write here is not just words. I have personally tried practically everything on myself.
And for me, this is the most important rule: if a person has not tested something on themselves, they cannot tell other people about it.

I have gone through many diets: completely oil-free, and diets with enormous amounts of oil; even diets consisting solely of oil and juices; liquid diets for several years, fruitarianism for several years, eating very little, eating very frequently, and so on.

In short, everything that exists.

The goal was always to become self-sufficient.

I never did become one. But I haven't pursued it all that intensely so far—to give up everything else, sit alone, and live autonomously. I have many other things to do. More important ones.

By no means do I mean that it is impossible to live autonomously and still be useful to society, or that these things are mutually incompatible. It just isn't for me at this point.

Perhaps I will do it in the future. I know it is possible. But it isn't necessary.
At the very least, one can simply eat as much as the body requires—healthy food.
The sacred books say that one can live this way for 300 years or more.
I agree, and I have read that in ancient times in Rus' people ate a substantial meal once a day, in the evening at 4 p.m.; in the morning they worked from 5 a.m. until noon, and then performed their rituals and rested. As for myself, I realize that the hungrier I am, the more vivid my sense of taste and smell becomes. It is simply a hint from nature: one only needs to become aware and connect with the knowledge given by OM Shanti. By listening to the body's sensations, the body itself tells you what and how much to eat. The main thing is not to rush while eating and to remain conscious of your sensations. A handful of food is enough, and it will be digested more properly than a larger amount that you swallow. My reasons for not following this are greed—you prepare a little more, feel sorry about throwing it away, eat it all, and the outcome is obvious—and, often, busyness: you want to get everything done, there isn't enough time, you eat while thinking about your tasks, so the food just passes through you; you are not present, and this is a sleep-like state. I also lack the state I had more than 40 years ago. When I was young, I worked in the city, and life was like everyone else's: work, food, sleep, and never enough time. I got tired of it, gave up on everything, went to the library, borrowed a book, and started reading for 2–3 hours a day. Everything else remained the same, but I suddenly had so much free time that I was looking for something else to do. As Maha Deva says, "The answer is already contained in every question." Thank you, OM Shanti, for shaking me up! I often try to push myself forward with words; they are like a key—the words my Angel spoke at five in the morning when I decided to lie in bed a little longer. Like a bell in my head, full of emotion, he shouted, "Intention! The Power of Intention!" I jumped up, eyes wide open; nothing like that had ever happened to me. We must remember and respect the Beings on all levels who perform Service to the Divine; I try to follow this. I want to reveal the very essence of Service, because I consider it the most important thing!
